As one of the most dynamic forces in hospitality, INK Entertainment has never followed the script—and that’s exactly how they’ve made their mark. Now, with bold plans to expand across South Florida and into Las Vegas, the company is leaning even further into immersive, experience-led concepts. From a Mediterranean-inspired hotspot in Las Olas to an innovative supper club in Miami, INK’s vision is clear: redefine what nightlife, dining, and cultural connection can look like. We sat down with Danny Soberano and Charles Khabouth to find out what’s next—and how they plan to keep surprising audiences on both sides of the border.
What’s next for INK Entertainment in Miami and the surrounding cities?
“We have big plans for South Florida. In about eight months, we’re opening Amal – Las Olas—our next step in bringing Mediterranean-inspired dining to vibrant, fast-growing neighborhoods. Las Olas has the energy and character that perfectly align with our vision.
We’re also launching an innovative interactive supper club in Miami that blends immersive storytelling, entertainment, and dining in a way that hasn’t been done before. It’s a concept with global potential, and Miami is just the beginning.
Alongside these new ventures, we’re expanding our restaurant footprint with upcoming locations in Boca Raton, Brickell, and West Palm Beach—further strengthening our presence across the region.” – Danny Soberano
The hospitality industry can be unpredictable. What moments stand out where you really made your mark?
“This industry thrives on change, and we’ve always leaned into that. For us, the defining moments haven’t just been about coming up with bold ideas—they’ve been about bringing those ideas to life in ways that surprise people and shift expectations.
One moment that stands out was when we reimagined what nightlife could look like by blending it with high-end dining. We didn’t just put a sushi bar in a venue—we created an experience where great food and high energy collided to deliver something truly memorable. That execution was a turning point—it showed what could happen when we refused to follow the traditional playbook.
Launching The Guvernment was a foundational moment. It wasn’t just a club—it became a cultural landmark in Toronto. It taught us the power of creating spaces that connect with people on a deeper level and stay with them long after the night is over.
VELD Music Festival was a major milestone as well. Taking it from an idea to one of Canada’s top electronic music festivals was proof of what could happen when we scaled our vision and went all in on experience-led entertainment.
Opening Bisha Hotel Toronto marked a new era for us. It brought together everything we do—restaurants, design, hospitality—under one roof. It’s a space that captures our creativity and commitment to doing things differently.
Expanding to the U.S. with brands like Byblos, Amal, and Sofia was another big leap. Launching in Miami validated our belief in the global potential of these concepts, and it’s built momentum as we prepare to enter new markets like Las Vegas.

And along the way, INK Entertainment has been recognized as a leader in the space, with Charles Khabouth receiving accolades like Toronto Life’s Top Restaurateurs and the EY Entrepreneur of the Year award. What are your core values, and how do they guide your team and decisions?
“At the heart of everything we do is hospitality. It’s more than service—it’s about creating experiences that leave a lasting impression. That mindset guides every decision we make. Whether it’s the flow of a space, the music, the plating of a dish, or the way a guest is welcomed, it all must feel intentional, elevated, and emotionally resonant.
We’re deeply rooted in culture, diversity, and energy. These aren’t buzzwords for us—they’re the foundation of our environments. We want every venue to feel alive, inclusive, and creatively charged, because we know that when a space has soul, people connect with it on a deeper level.
Just as important is our team. We believe in building genuine relationships with our staff and creating a culture where everyone feels seen, heard, and supported. Where do you see INK Entertainment in the next 5–10 years?
“We’re focused on smart, strategic growth, particularly in the U.S. Our expansion into experiential dining is underway, with a new supper club in Miami marking the beginning of something more ambitious and elevated.
