Set to open in Fall 2025, The Merchant Room at the highly anticipated Naples Beach Club, a Four Seasons Resort, will mark the Florida debut of acclaimed chef and restaurateur Gavin Kaysen. The two-time James Beard Award winner, known for his refined yet soulful approach to cuisine, will serve as the chef partner of this signature oceanfront restaurant.

Drawing inspiration from the spirit of service and connection, The Merchant Room will offer elevated new American cuisine in an ocean-view setting designed with timeless coastal elegance. Seasonal menus will spotlight the region’s vibrant ingredients while reflecting Kaysen’s bold, globally influenced flavors. An artful cocktail and non-alcoholic pairing program will round out the culinary experience, with the restaurant serving breakfast, lunch, and dinner in both indoor and terrace settings.
A custom mural and soft, natural design palette set the tone for a warm, welcoming space, while the expansive terrace overlooking both the resort pool and the Gulf offers one of Naples’ most stunning waterfront dining backdrops.

A nationally celebrated chef, Gavin Kaysen brings decades of experience and wide acclaim as one of the most influential voices in American cuisine. He is the founder of Soigné Hospitality Group in Minneapolis, which includes the beloved Spoon and Stable—a Midwest icon and James Beard Award finalist for Best New Restaurant—as well as Demi, an intimate 20-seat tasting menu experience and Relais & Châteaux member. His portfolio also includes Mara at Four Seasons Hotel Minneapolis, where Kaysen draws from his global culinary journey to create soulful, Mediterranean-inspired menus, and Bellecour, a French bistro and bakery with multiple locations across the Twin Cities. His philosophy of bold flavors, seasonal ingredients, and heartfelt hospitality will carry through to his newest endeavor in Naples.

Located on more than 1,000 feet of white-sand beachfront, Naples Beach Club, a Four Seasons Resort, will offer 220 guest accommodations and 153 private residences. Anchored by The Merchant Room, the resort will also feature a reimagined golf course by Fazio Golf Design, a world-class spa, racquet facilities, and Market Square featuring a lively community hub of shops, cafés, and restaurants.
