As I continue to study the beautiful flavors and techniques of Mexican cuisine, I’m captivated by its intricacies—its bold spices, the use of fresh herbs, and the art of traditional cooking methods. From the smoky notes of a perfectly grilled salsa to the delicate balance of flavors in a mole, each recipe tells a story of the land and its people.
Dinner at Amaya is a celebration set to immersive entertainment paired with DJ mashups and live bongos, like what you’d find in Tulum. How are you bringing that vibe to the Las Vegas Strip?
Dinner at Amaya unfolds in a setting that feels like you’ve stepped into a lush, tropical paradise, with living plants, a canopy of trees and exotic fire dancers that transport you straight to Tulum. An early standout among our guests is the Agave Asado, a smoky fusion of Del Maguey Vida mezcal, El Tesoro reposado, coffee-infused Demerara, and chocolate and orange bitters. The rich, roasted flavors are unlike anything you’d typically drink – and Vegas is all about exploration.
