What made you choose to bring your skills and knowledge as an executive chef to The Amalfi Llama?
I fell in love with the concept. Being from Patagonia, I grew up cooking over an open flame with my family during the holidays. From a young age, I learned the art of whole-roasted lamb, and that connection to live fire cooking has always been a part of me. The Amalfi Llama allows me to bring those traditions into my daily routine, keeping my roots alive in every dish I create.
What makes Amalfi Llama different from other restaurants?
It starts the moment you walk through the doors—the ambiance, the warm glow of the lighting, the sight of the wood-fired grill and pizza oven, and the unmistakable aroma of burning wood. But beyond that, it’s our respect for the best-of-the-best ingredients and the passion of our team. Every detail is intentional, creating an experience that goes beyond just dining.
How did you create the signature dishes?
It all starts with the product. We take high-quality ingredients and apply simple yet precise cooking techniques to honor their natural flavors and textures. It’s never about overcomplicating—it’s about letting the ingredients shine. And while I lead the vision, creating our signature dishes is a true team effort, with collaboration at the heart of everything we do.
What is your goal as the executive chef?
To consistently deliver the highest quality food, grow the concept, and establish The Amalfi Llama as a true destination for its authenticity and uniqueness. I want every guest to leave with a memorable experience that keeps them coming back.

At The Amalfi Llama, the culinary experience is a heartfelt fusion of Patagonian fire and Italian soul. Centered around an open parrilla grill and wood-burning oven, the kitchen transforms smoke, flame, and tradition into elegantly rustic dishes. Each bite invites guests to savor the warmth of the southern Andes and the comfort of an Italian dining room, all while enjoying handcrafted cocktails and a thoughtfully curated wine selection.
The Amalfi Llama offers more than just exceptional cuisine—it’s a destination. Guests can unwind with happy hour specials offered daily from 4–6 PM and again from 9 PM to close, enjoy live Piano Nights every Thursday and Friday at 6:30 PM, and experience high-energy vibes with a live DJ every Saturday night.
