Humble Chicken reopens today after a three-month renovation, with the revamped Soho restaurant on the hunt for a third Michelin Star. It was only in February that Humble Chicken, opened by Angelo Sato in 2021, received its second star in the latest edition of the Michelin Guide Great Britain & Ireland, having gained the first in 2024, a year after its first refurbishment. There was little time for the restaurant to crow about its win, shutting just a matter of weeks later to undergo a major renovation, with Humble Chicken 3.0 open to customers from today. The beak to foot, izakaya-esque restaurant is almost halving the number of covers it can handle, reducing the capacity from 20 to 13 – guests will now be seated around a cherry wood counter overlooking an open kitchen. This marks a significant shift in Humble Chicken's ethos, going from a yakitori counter, like those that Sato worked in as a youth in Tokyo, to more of a fine dining experience, with a 16 course omakase. This dramatic design shift is also reflected in a major overhaul of the drinks selection, with the sake range ballooning to 45-50 references, sourced directly from Japanese brewers. An expansion of the wine range has also been teased. With big changes come even bigger ambitions, as Sato has declared his desire for Humble Chicken to gain a spot in the culinary pantheon and earn a three star rating from Michelin, posting on Instagram during the announcement of the refurb back in March: "The team gave everything, every day. Relentless, passionate, unstoppable. I couldn’t be prouder of them and what we’ve achieved together. But the work isn’t finished. My dream has always been three stars, and that’s exactly what we’re coming for."
