Earlier this May, the property debuted its brand new Nikkei culinary concept, NUNA. This contemporary fine-dining experience blends Japanese precision with Peruvian soul. For a limited time, acclaimed chef Jaime Pesaque is taking over the hotel’s Edge Brasserie for dinner service. Pesaque’s flagship Lima restaurant, Mayta, earned a coveted place on The World’s 50 Best Restaurant list, and he is known for blending modern culinary techniques with rich Peruvian traditions.

NUNA is sourcing fresh seafood for its ceviche and sushi bar, premium wagyu beef and a selection of Peruvian chili peppers, Asian vegetables and traditional Japanese elements such as ponzu, yuzu and miso. Highlight dishes Ceviche Limeño with corvina, NUNA Roll with tuna, acevichado sauce, avocado and crispy shrimp, and Saltado al Wok, a bold stir-fry of beef and lobster infused with Nikkei flavors.
