Haute Living and Haute Wine Society Celebrate Richard Geoffroy and IWA Sake At Catch Miami Beach

On February 21, Haute Living and Haute Wine Society celebrated Richard Geoffroy former ‘Chef de Cave’ (chief winemaker) of Dom Pérignon for 28 years and the Founder and Creator of IWA Sake with an intimate and extraordinary tasting and culinary experience launching his newest creation IWA 5 – Assemblage 5 available at Catch Miami Beach.

The exclusive dinner hosted notable attendees, including Rohan Marley, Naeem Khan, Madlena Kalinova alongside Kamal Hotchandani, CEO of Haute Media Group, April Donelson, Senior Vice President of Haute Media Group, and more.

Geoffroy is widely recognized for his expertise in champagne production, blending, and his visionary approach to winemaking. With IWA 5, he has crafted a sake designed for both sake and wine lovers, with a new Assemblage being released each year, much like a vintage of wine. Always a Junmai Daiginjo, polished to 35%, IWA 5 is comprised of three different rice varietals and five different yeast strains, both sake and wine yeasts.

IWA 5 – Assemblage 5 is noted for its aroma of pear, raspberry, and plum, complemented by floral notes of rose and jasmine, along with subtle hints of spice and minerality. This avant-garde expression of sake is distinguished by its harmonious balance of warmth, weight, and refreshing acidity.

Guests delighted in dishes, including yellowfin tuna tartare topped with Kaluga caviar and lemon ponzu followed by the Catch nigiri flight flown in from the Toyosu market and the crave-worthy Miso glazed sea bass with jalapeño salsa, crispy leeks, and yuzu wasabi, and ending on a sweet note with a strawberry shortcake kakigōri with strawberry ice, mascarpone mousse, and lemon cookie crumble.

These exquisite dishes were paired with Dom Pérignon Vintage 2015, IWA 5 – Assemblage 5 (2023), IWA 5 – Assemblage 4 (2022), IWA 5 – Assemblage 3 (2021), and IWA 5 – Assemblage 2 (2020) which showed incredible complexity and depth with the extended aging.

Guests also enjoyed a special impromptu show from magician Anna DeGuzman with Naeem Khan and Madlena Kalinova along with an acapella performance from Jrey Soul, lead singer from the Black Eyed Peas.
