Sommelier Isa Bal and chef Johnny Lake, the founders of the two Michelin-starred Trivet near London Bridge, are due to open a new restaurant at the COMO Metropolitan London this September.
Trivet, which opened in late 2019, has become one of London's most-celebrated restaurants, gaining it's first Michelin Star 2022 and a second two years later. Now, Bal and Lake will be opening their second location together.
Specific details concerning the restaurant have not been revealed just yet, but what has been confirmed is that it is expected to open in September and will be housed within COMO Metropolitan London on Old Park Lane. The luxury hotel is already home to one of the capital's Nobu outlets.
What has also been shared is that it will be called Labombe,
the same name as that of the Monday night wine bar concept which began operating within Trivet last year. However, it appears that the restaurant no longer uses the 'Labombe' name for this weekly feature, using 'Mondays at Trivet' instead.
The marketing slogan that has been used for the announcement of (the new) Labombe, 'Où sont les boissons?' ('Where are the drinks?'), also offers a clear indication that the new restaurant will have wine at the forefront, with Master Sommelier Bal bringing his expertise to the list.

Restaurant also reports that as far as food is concerned, there will be some signature dishes from Trivet which will appear on Labombe's menu, and much of the cooking will be centred around the grill in the kitchen.
